Soils and expositions
South / southeast exposure, on deep limestone soils with clay on the surface.
Selection of the oldest vines in our plot, aged between 40 and 60 years.

Vinification
Hand-harvested, destemmed and placed in vats without crushing. Alcoholic fermentation takes place in vats, with very little stirring and using natural yeasts. After a month and a half, the wine is transferred to barrels for malolactic fermentation. It will remain there for 18 months, in 400, 500 or 600-liter containers. We use only 15% new oak barrels, the rest being 2, 3 or 4 years old.
The wine is then returned to the vat for blending, where it remains for 3 months to homogenize. It is then bottled without filtration, simply by natural clarification.
Specificity: limited production.
